The Chemical Safety Reality
First lets talk about Teflon. A good stainless steel pan is made of iron, carbon, chromium and nickel. It is completely safe. You can heat it to 600°F. It will not release any chemicals into your food.
What about titanium? Most titanium pans are actually pans with a special coating that has titanium in it. Long as the manufacturer says it is PTFE-free this coating is safe. It will not release fumes so you can cook safely.
The Sticking Factor and Heat Control
Stainless steel pans can be hard to use if you do not know what you are doing. If you put a piece of fish into a lukewarm pan it will stick. You have to be good at controlling the heat before you add oil and food.
Titanium pans solve this problem. They are easy to use. You can cook with less oil. They are good for people who’re new to cooking.
Durability: The Metal Spatula Test
This is where steel and titanium pans are different. A good stainless steel pan will last a time. You can use it with metal spatulas. Put it in a dishwasher. It will not break.
Titanium pans have a coating. They are better than pans but they can still break. One person said that her titanium pan started to lose its non-stick surface after 18 months of use.
The Winner for the Breakfast Cook
If you mostly cook eggs, pancakes or fish buy a titanium pan. It is easy to use. You do not have to worry about chemicals.
The Winner for the High-Heat Sear
If you want to cook steak or make a sauce buy a stainless steel pan. It is good, for heat and you can put it in a dishwasher.
